In the short clip that has spread widely, a person holds a slice of packaged American bread under a running tap. The bread soaks up the water like a sponge. Experts and bakers say the reason it behaves this way is because of extra ingredients mixed into the dough. These include vital wheat gluten, protein isolates and stabilisers. They help the bread stay soft for longer on supermarket shelves, give it more structure and make it last longer without going bad. Traditional homemade or fresh bakery bread usually falls apart quickly when it gets wet.
